I should clarify before we go any further that this is not your average curry. For one, it does not have any meat but it is still very tasty and so cheap to make!
All you need is chopped tomatoes, chickpeas and spices. You can also add various other bits and pieces like onion and garlic, but they’re not essential.
First up empty tomatoes into a pan and add spices (ginger, coriander, curry powder, cinnamon… anything that’s hanging around really) and stir it around until the sauce starts to thickens a bit. Then add the chickpeas with the water and stir. You’re meant to mash them as well but my efforts at this resulted in tomato sprinklings on the hob, although I did get some form of squashed chickpeas as well. After that you just leave to simmer for 5-10 minutes and then serve.
Easy-peasy and delicious (except if you don’t like chickpeas or tomatoes, in which case you shouldn’t attempt to make it!)
